Luncheon Gathering – GINZA GEO GASTRONOMY –

What you’ll experience in Ginza, right in the heart of the city, is not just a meal, but a journey to touch the “memory of the earth.”

Centered on the theme of “Vegetarian Cuisine × Seasonal Ingredients × Geology,” this luncheon gathering offers a special dining experience that not only allows you to savor the flavors of the ingredients but also takes you back to their “origins.” For example, by tasting root vegetables grown in fields spread across strata that were once the sea, you can experience the “memory of the ancient ocean,” and by savoring legumes grown in fertile soil created by volcanic ash from 100,000 years ago, you can sense the “time of the Earth.”

The dishes arranged on a single plate hold the stories of strata and local environments shaped over unimaginably long periods of time.

Based on the spirit of shojin ryori—which avoids killing and cherishes nature’s bounty—we shed light on the background of life and culture nurtured within our ever-changing planet.

By “enjoying the differences” woven from unique characteristics such as topography, geology, and climate, we aim to visualize the region’s rich terroir and the producers’ passion, allowing participants to experience firsthand the importance of revitalizing Japan’s local environments.

This experience serves as a gateway to adventure travel, where participants visit producers across Japan through the everyday act of eating.

By the time this meal concludes, participants will reflect on the background of the ingredients and feel a sense of excitement that inspires them to embark on a new journey to visit the producers.

The “Devour the Earth! Lunch Gathering” held in Ginza is a special luncheon where you can experience “geo-gastronomy,” a fusion of shojin ryori (Buddhist vegetarian cuisine) and geological perspectives.

Through cuisine, we express the “story” of the earth—imbued with volcanic ash from 100,000 years ago and the memories of ancient seas—allowing you to savor the origins of the ingredients.

With commentary from experts, you’ll deepen your understanding of the food culture nurtured by the region’s topography and climate.

This is a new, sensually stimulating program that uses this culinary experience as a gateway to invite you on a journey to visit producers across Japan.

A nature exploration guide will clearly explain the close relationship between topography, geology, and food. In particular, the hands-on lecture—which uses tofu to represent geological strata and recreate the mechanisms of earthquakes—has been highly praised by participants as a unique approach not found in traditional culinary demonstrations.

Rooted in the spirit of shojin ryori (Buddhist vegetarian cuisine), we bring to life the stories behind seasonal ingredients and carefully selected condiments. Each meal is designed to spark a sense of excitement that makes you want to embark on a journey to meet the producers, serving as a hub that connects Tokyo to the rich local cultures across Japan.

ITINERARY

11:00:

Meet at the Sakezen Club.

An explanation of the program’s purpose and an overview will be provided.

11:10:

Lunch will be served.

Based on shojin ryori (Buddhist vegetarian cuisine), you will enjoy dishes that embody the passage of time and the stories of the earth’s strata.

11:40:

A presentation on ingredients and the “geo-terroir” (the relationship between geology, topography, and food) will be given. This will include a lecture on interpreting food through topography and geology, as well as a demonstration of earthquake mechanisms using tofu.

12:10:

Time for participants to share their impressions and provide feedback (including filling out questionnaires).

12:30:

The program concludes, and participants disperse on-site.

DETAILS

1. Dress Code

Since the event will be held at a restaurant in Ginza (Sakuzan Club), no special attire is required, but please keep the following points in mind.

Venue Size:

To facilitate movement within the restaurant, which features both counter and table seating, it is advisable to avoid carrying large bags or wearing bulky clothing.

Neat and Tidy Attire: As this is an occasion to enjoy a meal based on shojin ryori (Buddhist vegetarian cuisine), we recommend neat, casual attire appropriate for a restaurant setting.

2. What to Bring

Cash: Please bring cash in case you wish to purchase additional souvenirs or cover personal expenses not included in the program.

3. Notes Regarding the Meal (Menu)

Menu Contents: While this program is based on the “spirituality of shojin ryori,” the monitor tour includes dishes containing seafood, such as “marinated firefly squid.”

Allergy Information: The meal makes generous use of specific ingredients and seasonings (soy sauce, miso), including Gokayama tofu (soybeans), nori seaweed, fried tofu, and oil miso.

If you have any allergies or dietary restrictions, please be sure to inform the organizer in advance.

4. Notes on the Program Schedule

Schedule:

The meal and commentary will be condensed into a 90-minute session from 11:00 AM to 12:30 PM.

Social Time: Since the meal and commentary are combined, there may be limited time for participants to converse at their leisure.

If you wish to socialize further, please take advantage of the time after the program concludes.

Listening to the Presentation: There will be demonstrations using tofu by experts and explanations using a monitor; however, depending on your seat location, the materials may be difficult to see.

In such cases, please move to a position where you can see clearly.
